It is a dashi stock that realizes the natural taste without relying on chemical seasonings, sticking to the raw material katsuobushi. Near the equator, bonito with a low fat content that is suitable for bonito is immediately landed at a nearby port and quickly processed into bonito (freshly harvested), using the old-fashioned Tebikiyamasiki roasting and Takinaya drying methods. The two-stage roasting and drying process locks in the umami (a special manufacturing method), resulting in a katsuobushi with no astringency or bitterness, and an elegant dashi with a slight sweetness.
