This is Koji made by the traditional koji lid manufacturing method. This handmade rice malt is suitable for making miso, pickles, salted koji, and amazake (sweet sake), using the best domestic rice, carefully propagating koji bacteria from the surface to the inside of the rice, and drying it so that it can be preserved for a long time. Koji made by this method has stronger enzymatic activity than koji mass-produced by an automatic koji making machine, and in sake brewing, delicate junmai daiginjo-shu, etc., can only be made with handmade koji made by this method.
